if you're not careful... with all these teeth. and i suggest, if you ever see 'em pointed at you, walker, just step off to the side when they're closeto the boat like this because they will jumpright into the boat. hello and welcometo the carolina outdoor journal. well, today's programtakes us down towrightsville beach, and, joe, we're fishin'for barracuda.
that's right, and it's,to me, one of our-- one of our top sport fish in our coastal watersjust because of the sheer fighting abilityof that fish. once you set the hook, you'd better have the right tackle. know what you're doin'. they're so fast, and you'll see this coming up. we have 'em up and down the coast.
you can catch 'em. today, we're fishing an artificial reef right off wrightsville beach-- i think it's two or three miles right off the beach-- that draws these fish in summertime. there's a lot of baitfish that hang in these areas, so it draws these bigger-- bigger fish, and these are-- these are nice barracuda today too. but typically, you'll find 'em in artificial--
on artificial reefs offshore, uh. generally,when you're trolling you'll pick up a lot, but today we're castingtopwater plugs to 'em, and then presenting a-- a, uh--a tube that, uh, captain stu caulder, who's with us today, has developed to fish for 'em-- a really unique combination they use to catch 'em. we had a lotta fun.
"geartime" is gonna bereal good today. yeah, they're gonna show ushow they rigged the topwater baitsthey used to actually bring the barracuda to you-- to get their attention off-- off the wreck-- and then used these two baits that he-- that he ties himself, uh-- real bright red, just really-- so the fish can really see 'em, but once you hook 'em,
you better havethe right tackle. and then today, donna's gota recipe using flounder, and she's gotsome veggies today too. (joe) yeah, baked flounder, vegetables thrown in, a real tasty recipe, and we're on the coast, so it's real appropriate. (john) let's head to wrightsville beach on the carolina outdoor journal. [percussive interlude]
(stu)there he is. guh--oh! ooh! (walker) ha, ha, ha! (stu) he come up on the topwater plug! (walker) golly, that was exciting. that was. glad i got himon this heavy rod. there he goes. let's see if he'll jump up again here for us.
(walker) what a strike! ha, ha...ha! i love it. i got a little heavier outfitthan you're using, so-- it's a little heavier, but-- (walker) that's a nice fish. that isa nice one. come on,big fella. well, i was throwin'this topwater plug, walker,
and just chuggin'this thing around. (walker) get these rods outta the way. i was ripping this bigtopwater plug across there, and he just came up thereand piled on it after i ripped itabout ten feet. (walker)what a strike. (stu)ha, ha...ha! there's nothing likea topwater bite when they come upon top and eat.
(walker)i'd thrown my tube in there just in case he wouldn't eatthat topwater bait. 'cause you said sometimesthey'll come and take a look at it, and if you put a tube in thereand buzz a tube by it, they'll jump up on the tube,but he hit the topwater. (stu)lot of times,they'll just come and investigatethese topwaters, but this onemust have been fired up.
he came in thereand piled on it. (walker)are you ready to land him? (stu)i think so. i think he'spretty wore out here. i tell you what,i'm gonna step up. why don't you slide in;get him by the tail. hey, beforewe do that, let's go ahead and getthe pliers ready. you gotpliers.
ok, i'm gonna loop and bringhim right back around to you. all right. just lift him in. there you go; step back. (walker)look at that pretty--pretty smile there. (stu)a dentist would be happywith those teeth. there he goes. all right, big fella. (walker) there he is!
put the cameraon him! there he is! [straining]this is the by-product of cuda fishin'--ha, ha...ha-- is, uh,these big jacks. (walker) ha, ha...ha! (stu)ha, ha! (walker) don't you just love seeing 'em come up and jump all over that?
(stu)how hot was that? (walker) you just love that. all right, stu,we're backin'down on him to get a littleline back and getmore over the fish. (stu)that's perfect. that way, we can letthese other guys have the wreck and not have to worryabout gettin' in their way while we'recatchin' a fish. (walker)you got a lottaline back there.
that fish took off. (stu)yeah, this fish is--he's wearin' me out. ahh! my arm's wearin' out. i've got some pressure on him too, and he's still-- (walker) they're powerful fish. (stu) they are. (walker) they can be 15 pounds and, uh, feel like they're 40 or more.
and i'm just kinda touchin'the spool a little bit with my fingersjust to give me a little more, but if he goes,i can always just let go of itand let him run. like right there,just let him go do his thing. (walker) look out for this other boat. whup, whup, whup! ok, hang on;hang on one sec. (walker) i'm in neutral; go under if you have to.
all right,hang on. he's underneath. he's comin'out this side. (walker) all right, i'm gonna back us down away from... uh, this other boat. he seems to wanna be right on this anchor line of this other boat. come on,buddy. ease onup here for me.
there he isright there. i just wanna getthose knots on the spool. there we go. here he comes, walker. now, i don't know--there he is. look at this big old thing. (walker) but i don't think-- there he is--ha! i think we've got another minute. (stu) all right; here you go.
there we go. (walker) what a fish right there. (stu) now, that's a by-product of fishin', right there, for those cudas. (walker)probably 20, 25 poundsworth of jack. (stu) look at that yellow fin on there, how pretty that is. (walker) he's bigger than my boga-grip; that's for sure. (stu)just don't grab himright there.
that thing right therewill cut you up. (walker)ok, let's release him. [mellow acoustic guitar leads soft rock arrangement] (stu)come on, big boy;eat that thing. (both)there he is! (walker)he's got it! (stu)all right! (walker)look at that! ha, ha!
awesome! [straining]oh, stu...he's-- he's goin' the otherside of the buoy! i got him backon this side. (stu) you got him? got him backon this side, buthe's around the buoy. let's get himaway from it. (stu) which way you want me to go, forward? i'm gonna hop downbefore i fall off.
(stu) i'm gonna go this way. yeah, let's get outover there. (stu)you need to goto the front? (walker)i'm gonna haveto go around the bow. (stu)ok, walk to the front;i'll keep the boat here in a goodposition for you. (walker)here he is. (stu)oh, we've got a great angleon him now. (walker)he's comin' back up.
(stu)there you go. (walker)ooh! he's goin' deep. (stu)there we go. that's a mighty lightoutfit you're using. (walker)heh, heh...heh he's right down under the boat. he is stayin' deep. (stu)that little rod you madeis workin' good. (walker)heh, heh, heh!
(stu)putting it in overtime. (walker)it might bea little light for this, but it's not too bad. (stu)do i need to backthe boat off him? (walker)i think so. i'm have to dip aroundand get under him. he's coming backout the other side. (stu)ok, all right. (walker) here he is.
(stu)ok. just let me knowif he goes under. i'll tryto stay off. where'sthat buoy? (walker)here he comes. (stu)it's just a bunchof sand out here. good. (stu)let me knowwhen he gets close. (walker)he wants to stay deep,
and every single timewe get him close to the boat, he sends us around the bowat least once. (stu)that's all right. (walker)now he's gotten outa little bit. he's comin' up. (stu)you're puttinga little pressure. (walker)i'm startin' to geta little bit back on him. (stu)he lookedlike a pretty good size. (walker)i think he's a decent fish.
(stu)you know, and if you'renot keeping a fish to eat, this is such a great speciesto go after. they're nottargeted commercially, so there'sa bunch of 'em. (walker)here we go. (stu)and they're so aggressive. (walker)just puttin'a little added pressure with my handon the spool. i can let gowhen he takes off.
(stu)that's a mighty light rodyou're using. how's the wear? (walker)it's really not as lightas it looks. this fish is justmaking it look light. (stu)that's the oneyou wrapped too, isn't it? (walker)yeah, yeah. (stu) aw, we should get him in. come on, big boy. here he comes.
(stu) we're the good guys; we're gonna let you go. we're not gonna put you on a board or nothin'. uh-uh (stu)i got him. (walker) go ahead. just lay him there on the side. (stu) good lord, he's big. (walker) look at that hook just barely hangin' in his mouth. (stu) look at that thing.
he's probably about, what, 17 pounds? (walker)something like that. (stu)not a bad fish at all. look at the parasiteson him. i'm amazed they stay on,as fast as they can swim. (walker) that was easy back in the water. all right,big fella. there you go. (stu) just like that.
all right. (walker)ah, that's great. (stu)that was a good fish. great job. that's whatwe came for. (walker)all right. look at that! (stu) ha, ha...ha! now, how fast was that?
(walker)how did he getfrom one place to the other? (stu) from underneath the boat to over there in a half a second-- ha, ha, ha! (walker)he stilldoesn't know he's hooked. (stu) i don't think he's done at all. that's a big 'un too. (walker)there he goes again! (stu) come on, jump for us. yeah! ha, ha...ha!
come on, big fella. i know you're not done yet. (walker)he isn't done. (stu) i'm laying your rod on the top just to get it outta the way. he can't be done yet. that's a big one too. (walker)i know that's a big one. (stu) i'm not ready to grab him.
[both laughing] hey, where'd you put your pliers at? (walker)in my pocket. he's right downunder the boat again! (stu)come on back over here. there you go. (walker)come on up, big guy. just let it go if you need to. (stu)gah.
(walker)get both hands on that,and i got this. (stu)ok, one, two, three. (walker)gah! what a fish! what a prettyfish. you--can you--can get him right up behind the gills,and i'll-- (stu) uh--ha! (walker) all right. (stu) now that right there--
(walker) that is a barracuda. (stu) that is a chunk of cuda. look at that big old mouthright there. (walker) look at that pretty fish. (stu)that's about a 30-pounder. (walker)yeah. let him go;let him go. good job!good job! (stu)better safe than sorryon those fish.
(walker)good job! (stu)whoa! better safe than sorrywith them. get 'em off the boat. right on, man. joe, there's one thing,that is a fast fish. and you can see,they hit the bait, and i mean,they're streakin'. they're goin' really fast.
and again, we have barracuda, uh, up and down the coast. most of the time, you catch 'em, lotta times, trollin'. a lotta guys troll and pick 'em up, but over these artificial reefs, the bait is drawn to the reefs. and so, naturally, these predatory fish-- the bigger fish are drawn in too,
and this is summertime fishing and-- and just loads of fun. it's a catch-and-release fishery, basically. some people, uh, keep 'em,but basically, really, you gofor the sport of it, but you've gotta be careful. as you can see,they're full of teeth. when you take the hook off, you just needto be ultracautious
on how you handle 'em,but just loads of fun. the tackle and thecatch and release-- let's goto "geartime." stuart, we justgot back inside after spendin'all morning about three miles offof wrightsville beach havin' a ball withbarracudas and jacks. what a great day. (stu)and you reallycouldn't ask for more.
we hadbeautiful weather. the water'snice and clear, um. you know, we hadsome good equipment to help us out. we had these nicequantum cabo 50-size reels, nice quantum cabo10- to 17-pound class rods, uh, little bit of 40 on top,and we put a little bit of that 20-pound powerprobraid up underneath 'em. and you need something niceand stout like that
with a good drag that'll reallykeep those jacks on there and not heat up because they're gonna burna lotta line, and quick. (walker) and we had a couple of fish that took 100, 150 yards of line in just what seemed like seconds. so, goodequipment that's-- that's builtto handle these fish is absolutely essential,and a good, smooth drag
is what you need. that's right,and it gives you a good way to presentthese lures. you need a nice rodyou can cast real good. and that'll help you presentthese big topwater plugs like thisbig tsunami plug we were usin'to tease these guys up. the jacks will definitelyeat these things. so will the cudas,but generally, we use this
as a teaser for cudas;then we throw that tube you've gotin your hand at 'em. tell us a littleabout the tube. it's justa piece of, basically,orange surgical tubing. and i just take a little bitof single-strand wire, run itthrough the middle, and use a single hookbecause you don't need all the trebleson there.
these fishare real aggressive. they're gonna eat it;you're gonna hook 'em. i'd put a coupleof quarter-ounce weights on top to give ita little weight. that way, you can basicallythrow that thing out there in front of 'em,lead 'em pretty good on the cudas and reel itas fast as you can. you can't reel itfast enough. (walker)they're fast enough.
if they wanna eat it,they're gonna chase it down. and it seemed like the faster you would reel, the more excited they got, the more aggressive they got, the more they would just pound on it. (stu)and with all thatpretty, clear water, you could see the fish comin',and it's really exciting when you're watching thatstrike come up behind it. it wasan incredible day. you couldn't askfor a more exciting day
with the jackson top, the barracudas,watchin' 'em come up and take the bait,and most of 'em leaped out of the water as they ate it and then just took off. you couldn't askfor a better day. i hada lotta fun. let's do itagain. you bet.

hi, today in the kitchen, we're making a baked flounderand vegetable recipe. and this is similarto a lasagna recipe, but instead of using noodles, we're gonna layer ourswith, um, flounder. so it's just a great recipe. it's quick, and it's easy. it's somethin'you can make ahead of time and reheat, um,for your family,
or if you wanna makea quick dinner, it goes togetherreally easily. you can use a lotof convenience items that you find in your store, like you're gonna useshredded carrots, chopped celery, um. you can buy all of it,actually, off the salad bar, so that even cuts downyour time even more, so that you don't havethat prep time.
so we're gonna start outwith, um, some celery. [sizzling] we have just some oil and some butter in here. then we're going to add some bell peppers, and you can see there's lots of great color in this. that's what i like about it. we're gonna use red and yellow. you can use green if that's what you have or a combination.
you can use about onelarge pepper or two small. we're gonna add shredded carrots to this, and you can buy these off the salad bar or you can also buy them in the produce section that are already shredded. so make use of those itemsthat you find to cut downon your cooking time and just make your prep time a little bit easier. and try to keep your things in--
well, we'll leave that there. we're gonna sautã© that; we're gonna add some garlic, so we're gonna have some great flavor in here. we're going to add some tomatoes, and i like to usethese smaller tomatoes, but you can use whole tomatoesand just dice them up. you can us a variety of different colors, which would be nice too. i'm all about the color,
and the more colorfulyour food is, the healthier it is,so keep that in mind too. i keep trying to tell my children that, um. so we're gonna give this a good sautã© till everything's gettin' a little bit tender, depending on how you like your vegetables. i like mine a little crunchy, so i probablywouldn't cook mine as long. we're gonna bake this, too,so keep that in mind.
we're going to add insome fresh basil... dill... and some parsley. and just give that a toss, and then we're just gonna let this cook, like i said, until your vegetables are about tender-crisp. then we're going to-- once they're ready to, um... to use...what we're gonna do is,
we're gonna takeour baking dish-- and i made minein a cast iron skillet just 'causeit's easy for me, but, um, we're gonna takeabout a third or a half of your mixture. place this in your baking dish. then we're going to add our flounder that i've just cut into strips. so i've taken off the skin and i've just cut into pieces.
this is a great way to use leftover, um, fish that you have, and you can use a variety of white fish that you like. you can even throw in some shrimp or some scallops. you can just--whatever you have and make it your own. then we're gonna top itwith some more vegetables. then you can eitherput cheese on top,
which my son thought would be a great idea 'cause i think everything tastes better with cheese, or you can put some nonfat yogurt-- greek yogurt on this, which would add a little more protein. you can also add some mayonnaise, or you can add, um, some sour cream. so i'm just gonna put some mayonnaise on here. then we're gonna bake this at 350
for about 30 minutes until it's bubbly. you're gonna cover it and bake it, and then pullyour cover off and let it get niceand brown on top. so this is what it looks likewhen it comes out. it's nice and creamy, and you have all these great vegetables and flavors, and your fish tastes amazing as well. so i hope you enjoy the baked flounder and vegetables.

primarily here in north carolina. they're, uh-- they're edible, but most people do catch 'em and release 'em. but, uh--wanna emphasize, like we did earlier, that you need to be careful. they have a mouth full of teeth. they're very quick, so be ultra cautious when you--when you land one, take the hook out and release him.
but loads of fun-- we've got 'em up and down the coast. primarily caught when you're trolling a lotta times, where we have abundance of bait fish that congregate, these--these barracudawill hang out over these-- these reefs, and--and you can go, like we did that day, and-- and basically call 'em up with the topwater, get their attention,
and like stu used with that tubing, uh, bait-- bait that he has worked up and makes his-- and makes his own-- very effective. when you set the hook, hang on,have the right tackle, you'll have loads of fun. you'll--no question what you've goton the other end-- no questionabout that.
